Ingredients
  • 1 cup Rajdhani Dalia
  • 1 tbsp oil
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • 1 sprig curry leaves
  • ¼ cup chopped onion
  • ½ cup mixed vegetables
  • ½ tsp red chili powder
  • ½ tsp coriander powder
  • ½ tsp amchur powder
  • 1 tsp salt
  • 2.5 cups water
Instructions
  • 1 Dry roast dalia 5 minutes; set aside.
  • 2 Heat oil; add mustard seeds, cumin seeds & curry leaves.
  • 3 Add onion; sauté until slightly soft.
  • 4 Add chopped vegetables; sauté 3–4 minutes.
  • 5 Add red chili, coriander & amchur powder with salt; mix.
  • 6 Add roasted dalia; combine well.
  • 7 Add water; cover and cook 12–15 minutes until absorbed.
  • 8 Rest covered for 5 minutes; serve hot.

Ingredients
  • 1 cup Rajdhani Dalia
  • 2 tbsp oil or ghee
  • 1 bay leaf
  • 2–3 cloves
  • ½ inch cinnamon
  • ½ cup chopped onion
  • 1 tsp ginger-garlic paste
  • ¾ cup green peas
  • 1 tsp salt
  • ½ tsp garam masala
  • 2 cups hot water
Instructions
  • 1 Wash dalia and drain.
  • 2 Heat oil/ghee; add bay leaf, cloves & cinnamon.
  • 3 Add onion and sauté until golden.
  • 4 Add ginger-garlic paste; cook 1 minute.
  • 5 Add peas, salt & garam masala; mix well.
  • 6 Add dalia; mix gently with the spices.
  • 7 Add hot water; adjust salt.
  • 8 Cover and cook until water is absorbed (10–15 minutes) or pressure cook for 2 whistles.
  • 9 Fluff and serve.

  • 1 cup Rajdhani Dalia
  • 4 cups milk
  • ½ cup sugar
  • ¼ tsp cardamom powder
  • 1 tbsp ghee
  • 1 tbsp mixed nuts (almonds, cashews, raisins)
Instructions
  • 1 Dry roast dalia 5–7 minutes until aromatic.
  • 2 Heat ghee; fry nuts until golden; remove and set aside.
  • 3 Add roasted dalia to the ghee; sauté 1 minute.
  • 4 Pour milk and bring to boil.
  • 5 Simmer 15–20 minutes, stirring occasionally, until thick.
  • 6 Add sugar and cardamom; cook 2–3 minutes.
  • 7 Serve warm, topped with fried nuts & raisins.

Instructions
  • 1 Wash dalia and drain.
  • 2 Heat ghee/oil in a pressure cooker; add cumin seeds & asafoetida.
  • 3 Add onion & green chili; sauté till light brown.
  • 4 Add mixed vegetables & turmeric; sauté 2 minutes.
  • 5 Add dalia & salt; roast 1 minute.
  • 6 Add water; close lid and cook for 2–3 whistles.
  • 7 Allow pressure to release naturally; fluff and garnish with coriander.
