Ingredients
  • 1 cup sooji
  • ½ cup rice flour
  • ¼ cup yogurt (optional)
  • 1 tsp cumin seeds
  • ½ tsp ginger paste
  • 1 green chili
  • 2 tbsp coriander
  • ½ tsp salt
  • 3 cups water
  • Oil or ghee
Instructions
  • 1 Mix sooji & rice flour; add yogurt if using.
  • 2 Add cumin, ginger paste, green chili, coriander & salt.
  • 3 Add water to make a very thin, watery batter.
  • 4 Rest batter 20 minutes; add more water if it thickens.
  • 5 Heat hot non-stick tawa; grease lightly.
  • 6 Pour batter from edges inward to form a lacy dosa.
  • 7 Drizzle oil; cook until crisp and golden (no flip needed).
  • 8 Fold and serve with chutney.

Instructions
  • 1 Mix sooji and curd; rest 15 minutes.
  • 2 Add onion, tomato, capsicum, green chili & salt.
  • 3 Add water to make a thick, spreadable batter.
  • 4 Spread batter on one side of bread.
  • 5 Heat tawa; add oil/butter.
  • 6 Place bread batter-side down; toast until crisp.

  • 1 cup Rajdhani Sooji

  • 4 Slowly pour hot sugar water into roasted sooji while stirring (careful of splashes).
  • 5 Cook until liquid is absorbed and halwa leaves the pan.
  • 6 Add fried nuts; mix and rest for 2 minutes.
  • 7 Serve warm, garnished with more nuts.

  • 1 cup Rajdhani Sooji

Instructions
  • 1 Dry roast sooji on low flame until lightly golden and aromatic; set aside.
  • 2 Heat oil/ghee; add mustard seeds & cumin; let them splutter.
  • 3 Add curry leaves, green chilies & onion; sauté until translucent.
  • 4 Add mixed vegetables & ginger paste; cook 2–3 minutes.
  • 5 Add salt and hot water; bring to a rolling boil.
  • 6 Lower flame; slowly add roasted sooji while stirring continuously.
  • 7 Cover and cook 3–5 minutes until water is absorbed.
  • 8 Garnish with coriander and lemon juice.
