  • 1 Prepare seasoned mashed potato cutlets and keep aside.
  • 2 Mix maida, salt & pepper in a shallow dish.
  • 3 Add water gradually to form a thin, smooth slurry.
  • 4 Spread breadcrumbs on a plate.
  • 5 Dip each cutlet fully in slurry; let excess drip off.
  • 6 Coat in breadcrumbs, pressing gently to form an even crust.
  • 7 Fry until golden and crisp.
  • 8 Enjoy perfectly bound, crunchy cutlets.

Ingredients
  • 1.5 cups Rajdhani Maida
  • 1 cup powdered sugar
  • ½ cup yogurt
  • ½ cup oil
  • 1 tsp baking powder

Instructions
  • 1 Preheat oven to 180°C; grease and dust a loaf tin.
  • 2 Whisk yogurt, oil, and sugar until creamy; add vanilla.
  • 3 Sift maida, baking powder & baking soda together.
  • 4 Fold dry ingredients into wet mixture gently.
  • 5 Add a little milk if batter seems thick.
  • 6 Pour into tin; tap gently to release air bubbles.
  • 7 Bake 30–35 minutes or until toothpick comes out clean.
  • 8 Cool 10 minutes in tin, then on a rack.

  • 1 Combine maida, salt, and turmeric in a bowl.

  • 4 Heat a greased tawa.
  • 5 Pour a ladleful of batter and spread into a thin circle.

  • 1 Mix maida, suji, salt, sugar, and baking soda in a bowl.
  • 2 Add yogurt and oil; combine well.
  • 3 Add warm water gradually and knead 8–10 minutes until soft and elastic.
  • 4 Grease dough lightly, cover with a damp cloth, and rest 2–3 hours.
  • 5 Heat oil for deep frying.
  • 6 Roll small portions of dough into round/oval shapes.
  • 7 Slide into hot oil; press gently to help it puff fully.
  • 8 Fry until golden on both sides; drain excess oil.
