Ingredients
  • 1 cup poha
  • 2 cups hot or cold milk
  • 2 tbsp jaggery or sugar
  • ¼ tsp cardamom powder
  • 1 tbsp raisins
  • 1 tbsp sliced almonds or pistachios
  • ½ cup chopped mango or seasonal fruit (optional)
Instructions
  • 1 Rinse poha lightly to soften; place in a bowl.
  • 2 Dissolve jaggery/sugar in a little warm milk.
  • 3 Pour this sweetened milk over the poha.
  • 4 Add remaining hot or cold milk.
  • 5 Add cardamom, raisins, nuts & fruits.
  • 6 Rest 5–10 minutes to absorb milk.
  • 7 Mix lightly and serve.

  • 2 cups thin poha
  • ½ cup oil (for frying)

  • ½ tsp red chili powder

Instructions
  • 1 Heat oil; fry peanuts, cashews, and dal until golden; remove.

  • 3 Keep around 2 tbsp oil in the pan; add mustard seeds.
  • 4 Add turmeric and chili powder; mix quickly.
  • 5 Add dry poha; roast 5–7 minutes on low flame until crisp.
  • 6 Turn off heat; add fried nuts, curry leaves, salt & sugar.
  • 7 Mix well; cool completely before storing.

  • 1 cup Rajdhani Poha (thin or medium)
  • 1 tbsp ghee or oil
  • 1 tsp mustard seeds
  • 1 tsp sesame seeds

  • ½ tsp salt

Instructions

Ingredients
  • 2 cups Rajdhani Poha (medium)

  • 1 tsp mustard seeds
  • 1 tsp fennel seeds (optional)

  • 1 cup chopped onion
  • 1–2 green chilies
  • ½ tsp turmeric powder
  • 1 tsp salt
  • 1 tsp sugar
  • ½ lemon (juice)

  • ¼ cup roasted peanuts
Instructions
  • 1 Rinse poha in a strainer for 30 seconds; drain and keep aside to soften.
  • 2 Heat oil; add mustard and fennel seeds; let them splutter.
  • 3 Add curry leaves, asafoetida, onions & green chilies; sauté till translucent.
  • 4 Add turmeric and salt; cook 1 minute.
  • 5 Add softened poha and sugar; mix gently.
  • 6 Cover and steam 2–3 minutes on low flame.
  • 7 Add lemon juice, mix lightly.
  • 8 Garnish with coriander and roasted peanuts.
