Ingredients
  • 1 cup Rajdhani Macaroni
  • 2 tbsp butter
  • 2 tbsp refined flour (maida)
  • 1.5 cups warm milk
  • 1 cup grated cheese
  • ½ tsp turmeric powder
  • ½ tsp garam masala
  • ¼ tsp red chili flakes
  • 1 tsp salt
  • breadcrumbs for topping
Instructions
  • 1 Boil macaroni as in Recipe 1; drain and set aside. Preheat oven to 180°C.
  • 2 Melt butter; add maida and whisk 2 minutes to make a roux.
  • 3 Slowly add warm milk while whisking until sauce thickens and smooth.
  • 4 Remove from heat and stir in grated cheese, turmeric, garam masala, chili flakes and salt.
  • 5 Mix macaroni into the cheese sauce and transfer to a baking dish.
  • 6 Sprinkle breadcrumbs on top and bake 15–20 minutes until golden and bubbly.
  • 7 Serve hot — a fusion of classic mac & cheese with warm Indian spices.

Ingredients
  • ½ cup Rajdhani Macaroni
  • 4 cups vegetable stock or water

  • ½ tsp chopped ginger

  • 1 tsp salt

Instructions
  • 1 Boil macaroni separately as in Recipe 1; drain and keep aside.
  • 2 Heat oil or butter; sauté chopped ginger 30 seconds.
  • 3 Add diced mixed vegetables; sauté on high 3–4 minutes until slightly tender-crisp.
  • 4 Pour in vegetable stock or water and bring to a boil.
  • 5 Add soy sauce, black pepper and salt.
  • 6 Mix cornflour slurry into the soup, stirring until slightly thickened.
  • 7 Add boiled macaroni and simmer 2 minutes to heat through.
  • 8 Garnish with spring onion greens and serve hot.

  • ½ cup chopped onion
  • 1 tsp ginger-garlic paste
  • 1 cup chopped tomato
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • ½ tsp red chili powder (adjust)
  • ½ tsp garam masala
  • 1 tsp salt
  • 2 tbsp tomato ketchup
  • 1 tbsp chopped coriander
Instructions
  • 1 Boil 4 cups water with ½ tsp salt & 1 tsp oil. Add macaroni and cook al dente; drain and rinse with cold water.
  • 2 Heat oil in a pan; add cumin seeds and let them splutter.
  • 3 Add chopped onion and sauté until translucent; add ginger-garlic paste and cook 1 minute.
  • 4 Add chopped tomato and cook until tomatoes soften and oil separates (≈5 minutes).
  • 5 Stir in turmeric, coriander powder, red chili powder, garam masala, and salt; cook 1 minute.
  • 6 Add boiled macaroni and tomato ketchup; mix gently to coat with masala.
  • 7 Cover and cook on low 2 minutes to blend flavors.
  • 8 Garnish with chopped coriander and serve hot.
