Ingredients
  • 2 cups Bedmi Atta (whole wheat flour + urad dal mix / dal atta)
  • ¼ cup urad dal (soaked and ground into a coarse paste)
  • 1 tsp fennel seeds (coarsely crushed)
  • 1 tsp red chili powder
  • ½ tsp turmeric powder
  • ½ tsp ajwain (carom seeds)
  • Salt to taste
  • 1 tsp oil (for kneading)
  • Oil for deep frying
Instructions
  • 1 In a mixing bowl, add bedmi atta, ground urad dal paste, and all the spices.
  • 2 Mix well and gradually add water to knead into a firm dough.
  • 3 Add 1 tsp oil and knead again for 1 minute until smooth.
  • 4 Cover and rest the dough for 10 minutes.
  • 5 Divide the dough into small portions and roll into balls.
  • 6 Apply a little oil and roll each ball into a small thick puri (avoid using flour).
  • 7 Heat oil in a kadhai on medium-high flame.
  • 8 Slide one puri into the hot oil and gently press with a ladle to puff it up.
  • 9 Fry until golden and crisp; remove and place on absorbent paper.
  • 10 Serve hot with aloo sabzi, chutney, or pickle.

Crispy, spicy, and full of flavor — traditional Bedmi Atta puri just like Delhi street style.
